For Garnish
- Fresh parsley, chopped
Instructions
1. Sear the Chicken & Sausage
- Heat 1 tbsp olive oil in a large Dutch oven or deep skillet over medium-high heat.
- Season the chicken with salt, pepper, and smoked paprika, then sear until golden brown (about 4 minutes per side). Remove and set aside.

2. Sauté the Vegetables
- Add 1 tbsp olive oil, then toss in the onion, garlic, carrots, celery, and red bell pepper.
- Sauté for 5 minutes until softened and fragrant.
3. Build the Stew Base
- Stir in the tomato paste and cook for 1 minute to deepen the flavor.
- Pour in the red wine (if using) and deglaze the pan, scraping up browned bits.
- Add the chicken broth, Worcestershire sauce, thyme, and oregano. Stir well.
4. Simmer to Perfection
- Return the chicken and sausage to the pot.
- Bring to a gentle boil, then reduce heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally.

- Garnish with fresh parsley and serve hot with crusty bread, rice, or mashed potatoes.
